Pumpkin Milkshake

Ok, if you do not know yet, I am the Queen of Concoctions. Tonight after dinner I made a "Pumpkin Milkshake"... and I must say, a success once again! It was obviously 'YUM-pkin!

I also rarely measure anything I mix while cooking, but if you love pumpkin and are in the mood for a fall delight, give this a try.

Pumpkin Milkshake:
In a drinking glass mix
2 Tbsp.  Pumpkin Puree (canned or fresh)
3/4 C.    Milk
1/2 tsp.  Cinnamon
2 tsp.     Sugar (or more for your desired sweetness)

Stir mixture in glass and then poor into a blender.
Add about 5 ice-maker-size ice cubes to mixture in blender.
Blend until well mixed and ice cubes are crushed.
Poor back into your mixing glass, add a straw and "sip some fall delight"!

*If you love pumpkin lattes add your favorite espresso or creamer to the mixture (flavored or regular), a tiny dash of nutmeg, or even some cocoa - for you 'choc-aholics'.

Pumpkin is incredibly rich in vital anti-oxidants and vitamins. This humble backyard vegetable is very low in calories yet good source of vitamin A, C, and E.
